Houston is known for its cultural diversity, and its culinary landscape reflects that melting pot.
As KPRC 2 prepares to cover the 2024 Paris Olympics, anchor Daniela Guzman stopped off at several French restaurants in the city to experience the cultural culinary experiences Houstonians can enjoy.
Chef Philippe is the owner of PS 21, a casual yet authentic French restaurant.
Chef Philippe and Chef José Manuel Hernández are friends and previously worked together at a French restaurant in New York City.
At PS 21, we delved deeper into the delicious side of French cuisine.
We tried the classic croque monsieur, escargot, and a few main dishes. “It doesn’t get more French than escargot and steak frites,” said Chef Philippe.
This traditional dish from the south of France was like a flavoursome party in our mouths. Seafood bouillabaisse is a seafood stew with mussels, fish, shrimp, potatoes and warm broth. “In Marseille, the fishermen make this dish themselves, and they don’t necessarily clean the fish from the inside, so it’s very flavourful – it has a strong fishy taste,” says Philippe.
Next came the popular shareable raclette: a charcuterie board with cold cuts, salad, and potatoes topped with melted raclette cheese. Just when you thought you couldn’t eat any more, Chef Philippe brought out a traditional French soufflé. “It’s very flavorful, but you can also add chocolate, vanilla, Grand Marnier. There are lots of variations,” Chef Philippe said.
Chef Philippe is also a big Olympic fan. His father grew up watching the Olympics with him.”
He is proud that Paris will be the setting for such a major global event that will bring people together in love and passion for sport.
