For the past six months, Jay’s Good Grub has been focused on expansion. Their newest brick-and-mortar restaurant will open inside Windridge Country Club in the coming weeks, and a second food truck will hit the road soon.
The first big change for Jay’s came in January when it opened a brick-and-mortar location at 224 Carlton Drive, though it wasn’t an actual restaurant: The location sells food at a counter for lunch and dinner, but all of the food is prepared inside the food truck, a converted version of the iconic white bus.
“The great thing about this place is that the place (near Carlton Drive) is open during the day, so we’re open for lunch,” Antionette Johnson said. “We’re trying to get into this side of town, so we’ll be doing fish fries and soul food plates and things like that around here.”
Johnson said the spot has been well-received by Jay’s so far, and he hopes to eventually add picnic tables in the back to give customers a real backyard barbecue experience.
Johnson said the location will also have enough space for a second food truck, which will open soon, to park after spending a day in town. Both trucks will be listed on the app, allowing customers to order ahead and track their locations throughout the week.
But the biggest change for the Jays so far is the addition of a full-fledged restaurant, taking over the restaurant portion of the clubhouse at Windridge (5044 Millers Mill Road) and featuring a full kitchen and seating. You don’t need to be a club member to dine at the restaurant.
“It was a shock to us,” Johnson said, “They reached out to us about running the kitchen and we had to work out the kinks. The course is now open to the public, not just members, so we’re really excited.”
Johnson said the store is still undergoing preliminary checks and inspections before it officially opens, but that his client, Good Grub Nation, expects it to be open within three weeks.
Johnson said the changes have been truly overwhelming, and it all follows a decision they made in December to change the way they do things and not let them get in the way of the blessings God has in store for them.
“It all became a deal we couldn’t refuse, so it’s just overwhelming joy and knowing that God had a plan for this because these things came to us, we didn’t go to them, so it’s a blessing, as they say, your cup is overflowing,” she said.
Johnson said people can keep an eye on Facebook for information on when the restaurant will open in Wind Ridge and when the new trucks will be on the road.
