IDAHO FALLS — A restaurant in downtown Idaho Falls is serving traditional Vietnamese food, freshly prepared by the owner.
Husband and wife team Tila Le and Sean Do are both originally from Vietnam, and last year they became the owners of Hot Springs Pho, a restaurant that was featured on East Idaho Eats earlier this year.
“Pho is a Vietnamese dish. It’s a very flavorful dish. People love it,” Shawn said.
Pronounced “fu,” this soup dish is a mix of delicious broth, noodles, and a variety of toppings.
“Basically, we use a lot of beef bones to make the soup, and it takes time,” Sean said. “It takes anywhere from 12 to 24 hours to make the soup. It has meatballs, brisket, flank and rare steak in it.”
Hot Spring Pho also offers a sausage roll, which is filled with lettuce, cabbage and glass noodles and served with peanut sauce.

“The roll is stuffed with crunchy Vietnamese pork sausage,” says Tila.
They also offer specialty drinks, such as milk tea with a particular type of tapioca.
“Everyone knows tapioca but this is crystal tapioca. The texture is different from regular tapioca. Regular tapioca is chewy. This is crunchy. This is my special milk tea that I make from scratch. I don’t use any powder,” Tila said.
Another dish EastIdahoNews.com tried was the sure-to-be-satisfying glass noodle bowl, which comes with a sauce on the side to pour over the food.
“It’s like a salad bowl,” Tila says, “It has grilled pork, egg rolls and shrimp skewers. It’s served with salad and pickled carrots.”
