CHARLOTTE, N.C. — The Carolinas are experiencing a heatwave and many are considering bringing coolers to enjoy a day outdoors and beat the heat.
But before you pack your cooler with food and drinks, you should take the proper precautions to keep the meals and treats safe for your friends and family.

Whether you’re packing something simple like fruit and sandwiches, or food to cook on the grill, proper food storage is important to prevent food poisoning and the spread of bacteria.

The FDA says cold foods should be stored at 40 degrees or below to prevent bacterial growth. Foods like meat, poultry, and seafood can be packaged and frozen to keep them cold for longer. If you’re cooking meat, Cherwony recommends cooking it in small portions.
“Cook only as much as you need so you don’t have to leave food out longer than necessary,” she warned.
According to the FDA, food should never be left out for more than two hours. If the temperature outside reaches 90 degrees, food should only be left out for an hour. If it’s left out longer than that, throw it out.
If soap isn’t available, doctors recommend keeping hand sanitizer nearby for everyone to use, especially before touching raw foods.
“When you’re transporting food, you’re touching raw food, you’re touching vehicles, you’re touching utensils, you’re touching all these things,” Cherwony said.
Atrium Health recommends storing separate coolers — one for drinks and another for meats — to prevent cross-contamination.
