GREAT FALLS — On Saturday, you can try fresh Mexican food at Taco Del Compa outside Central Avenue Meats, which has plans to expand in the future.
“That was one of my main goals,” says Central Avenue Meats employee Omar Rojas, “just to bring the flavors of Mexican tradition from Mexico.”
While working at Central Avenue Meats, Rojas worked with owner Drew Hicks to try and achieve more.
“We thought it would be a good idea to work together,” Rojas said, “and he has good meat — you know, 100% grass-fed beef — and we have really good seasonings, so we decided to work together.”
For Hicks, the collaboration was a natural fit.
“We’ve had the good fortune to taste their food and it’s amazing,” Hicks said. “It’s authentic. It’s amazing. We’re so happy he’s part of our family.”
That led to the opening of Taco Del Compa, with Rojas setting up shop in front of Central Avenue Meats, cooking fajitas and other Mexican staples on Saturday mornings.
His goal is to gain enough traction to expand into a taco truck.
“We’ll start with a mobile location and then maybe open another one if it works out,” Rojas said, “and then eventually, if possible, we’ll open up a brick-and-mortar location so we can open up our menu.”
Taco Del Compa combines authentic Mexican cuisine with local Montana ingredients.
“Just knowing that we have local farmers and local ranchers supporting us and Drew’s coming in and creating a great place downtown,” customer Anna Fries said.
And this step towards sticking to local is one that resonates with those who have tried LOHAS’s food.
“We love these guys and we want them to stay for a long time,” said Richard Armstrong, another Taco Del Compa customer.
