Summer is fast approaching which means food trucks are starting to pop up more and more, and it also means Dirty Dough Food Truck is now open for business in Bemidji.
“We started construction on the trailer in January, so this is our fourth time opening,” said Brianna Lindgren, co-owner and operator of Dirty Dough, “We’re a franchise based in Utah. We do stuffed cookies, big stuffed cookies with toppings.”
Though the company originated in Utah, Lindegren is no outsider to Bemidji.
“We actually live in Bemidji, just north of the airport, so that’s our hometown,” Lindegren said, “so, yeah, we’ll be hitting up different places around town and then going out about an hour from Bemidji.”
Last year was a huge success for the food truck, but they wanted to upgrade as much as they could during the off-season.
“The trailer was newly built, so that was part of the wait for us,” Lindegren explains. “We think it’s a lot more efficient in terms of the way it’s built. Of course, there’s a giant freezer inside, there’s a sink for hand washing and things like that, there’s warmers and cooling racks, and there’s a beverage refrigerator.”
She also explained how she makes her gourmet cookies: “We have two commercial ovens in our trailer. We order the cookies through Sysco. When they come in, we store them, bake them and decorate each cookie to order, so this also takes some time.”
Maybe Lindgren’s is doing something right, because customers are willing to wait nearly 40 minutes just to get a taste.
“It’s amazing. Every time we open we’re sold out,” she added. “It’s really special. I don’t know if people are going to wait 40 minutes for cookies, but it’s really nice to have that many people waiting. We’re working really hard to shorten the ticket sales time. We can only bake so many cookies at a time, so that does slow down the process. But everyone has been so patient and really supportive, and I’m so grateful. It’s been really good.”
The Dirty Dough food truck’s usual color is bright orange, but Lindgren wanted to add a more personal touch and go for a teal color. If you want to know where the food truck will be next, you can check out their Facebook page.
