Let’s take a moment to thank the Texas State Health Inspectors.

Behind the Scenes
I happen to know a few people who were in the restaurant industry, and they delivered cleaning supplies to restaurants and helped with equipment and instructions for keeping them clean. I’m glad that the restaurants were getting the supplies, but I’ve also heard some horror stories about supplies not being used and which kitchens to avoid. You probably don’t have the insight that I did.
Inspectors
Which brings us to the oft-maligned food inspectors. I remember one incident in particular where a popular BBQ joint got a bad review. People were calling for the fire of the food inspector for just doing their job. Personally, I don’t care if it’s my mom’s kitchen. I want to know if there’s a cockroach crawling on my cutting board. The restaurant/food inspector is your only line of defense to keep you from eating contaminated food.
Ticky Tack
Sometimes it seems like the inspectors are “weighting” them. That’s the real inspiration for this post. It’s no wonder they don’t take things like “drinking personal drinks in the kitchen”, “not washing hands before putting on gloves”, “not labeling properly” seriously. These things show that the person in charge of the kitchen has no understanding of the rules (and as you may have noticed, the people who make these little mistakes make a lot of them). If they make these obvious mistakes in front of the inspectors, what do they do behind closed doors?
Second Chance
It’s unfortunate when your favorite restaurant gets a bad report, but there’s also good in it. We all need a little reminder every now and then. If you hear a bad report about your favorite restaurant, take the time to check if there’s been a follow-up report and if any corrections have been made. In the meantime, thank your local food inspectors and ask them to be mindful of those who serve you food.
