LAS VEGAS, Nev. (FOX5) — Whether you’re only outside for a few minutes or a few hours, these record-breaking temperatures can be unbearable.
The guys who work at John Marl’s Meat & Road Kill Grill have to do all of their cooking outside, even though it feels like they’re cooking in the sun.
Owner Chuck Frommer tells FOX 5 that his team comes in to work every day at 6 a.m. Frommer and his team cook for at least 12 hours a day.
But all the barbecue food they cook needs to be handled safely: They keep their grills above 200 degrees at all times.
“We either serve it to customers right away or we warm it up in a 165-degree warmer,” Frommer said.
While customers are ordering inside, food continues to be cooked outside.
While FOX5 didn’t get the secrets of his famous barbecue recipe, we did get the secrets of how Frommer’s and his employees stay safe in the scorching heat.
“We feed them raw potatoes with salt; the potassium really helps them,” Frommer said.
Frommer told FOX 5 he frequently rehydrates by drinking liquids that contain sugar and sodium.
Under the tent where employees cook the meat, the heat from the grills and smokers makes it feel like at least 140 degrees Fahrenheit at any given time, Frommer said.
But employees don’t go in because they think taking a break will make things worse.
“It keeps your body temperature constant. You don’t have time to think about the heat,” employee Clarence Young said.
Young told FOX5 he drinks up to six half-gallon jugs of water a day.
Frommer said the store will remain open rain or shine, dangerous temperatures or not.
“Every day I’m just trying to see if I can do better than the day before,” he said.
