According to a press release from Conscious Hospitality Group, the three new restaurants will open at The Bellevue Collection’s Lincoln South Food Hall, 500 Bellevue Way Southeast.
Seattle-based Conscious Hospitality Group plans to open a non-alcoholic soda bar, a Detroit-style Korean pizza place, and a salad, sandwich and juice bar.
“This opening promises a variety of options for you to fully immerse yourself in CHG’s purpose-driven mission,” co-founder Norman Wu said in a news release. “Pick a concept that suits your taste buds or satisfies your craving of the day and go on a culinary journey with us.”
Each restaurant will be 500 square feet and is scheduled to open on June 24th.
The Lincoln South Food Hall reopened in June 2023 with five new dining concepts: Drip Tea, Soul Bowl, West Coast Tacos, Wonderbowl and Barb’s Burger. As employees begin to return to the office, the food hall has extended its hours and is now serving both lunch and dinner.
“With office workers returning, now is the perfect time to open our refreshed space as part of The Bellevue Collection’s growing Dining District,” said Jennifer Leavitt, vice president of marketing for The Bellevue Collection. “Furthermore, building on the Dining District’s successful local-to-global offerings, the food hall experience brings a new social, shared dining dimension to our mix.”
The food hall closed in March 2022 to allow for a redesign of the concept, at which point ownership changed from Ascend Hospitality Group to Kemper Development Company. The dining collection first opened in 2018.
Dote Coffee Bar, which is considered part of the Lincoln South Food Hall, opened in 2017 and has remained open while other concepts at the food hall have undergone multiple changes.
Conscious Hospitality Group, which is opening three new concepts at the Lincoln South Food Hall, is set to open Sano Café in downtown Bellevue in collaboration with Lisa Nordstrom later this year. The fast-casual restaurant, which embodies healthy living and mindful eating, will open in the Amazon-leased Center 425 on 106th Street Northeast.
Conscious Hospitality Group says Bellevue’s unique market dynamics make it an ideal location despite its proximity to Mercer Island. Sano Cafe was established on Mercer Island in 2017. After gaining a loyal following, Lisa Nordstrom and Conscious Hospitality Group began envisioning a bigger expansion, with several other locations currently in the planning stages, including Redmond and Queen Anne.
